ZUCCHINI CHUTNEY | |
6 c. finely chopped zucchini 4 c. chopped, peeled apples 2 c. finely chopped onions 1 c. chopped pitted prunes 1/2 c. chopped candied ginger 1 can crushed pineapple, drained 3 c. brown sugar 1-1 1/2 c. cider vinegar 1 tbsp. cinnamon 2 tsp. allspice 2 tsp. salt (optional) 1 tsp. ground cloves 1 tsp. mustard seeds 1/2 tsp. cayenne pepper In pot, combine all the above ingredients. Bring to boil, lower heat and simmer for 1 1/2 to 2 hours. Mixture should be thick. Stir often while mixture is cooking. Put mixture in sterilized jars and seal. Makes about 5 jars. |
