BAKE - OFF ENTRY: MOM'S PUMPKIN
CHEESECAKE
 
1-2 tbsp. butter
1/4 c. graham cracker crumbs
4 (8 oz.) pkg. cream cheese
1 1/2 c. sugar
5 lg. eggs
1 tsp. vanilla
1/4 c. flour
1/4 tsp. salt
1 (16 oz.) can pumpkin
2 tsp. pumpkin pie spice

Preheat oven to 325 degrees. Butter bottom and sides of 9 inch springform pan and sprinkle with crumbs. Beat cream cheese until fluffy. Gradually add sugar and beat until smooth. Add eggs, one at a time, beating well after each addition. Beat in remaining ingredients and pour into prepared springform pan. Bake 1 hour and 30 minutes or until sides are firm and center is still soft. Turn off heat. Open door to slightly open position for 30 minutes. Remove and cool. Place in refrigerator overnight.
