BEATEN BISCUITS 
2 3/4 c. flour
1 tsp. salt
4 tsp. double acting baking powder
1 stick butter
2 tbsp. Crisco
1 c. milk

In a bowl, sift 2 cups of the flour with the salt and baking powder. Cut the butter and Crisco into this mixture and add milk a little at a time. Beat with a large cooking spoon. Batter will be loose. Put the remaining 3/4 cup flour on a pastry board and knead the batter in it until it is the right consistency to roll out. Roll out the dough and cut with a biscuit cutter. Bake the rolls on an unfloured pan at 375 degrees for 12 to 15 minutes until they are slightly brown.

You may also make Cheese Biscuits out of this recipe by adding a 1/4 cup of grated Cheddar cheese to it. A nice variation.
