ITALIAN LEMON CHICKEN 
3 medium to large chicken breasts (boneless, skinless)
1 env. Italian dressing mix (Good Seasons)
6 tbsp. (2/3 stick) butter
2 lemons

Preheat oven to 375°F.

Melt butter in a 9x13-inch casserole dish. Slice unpeeled lemons about 3/16-inch thick and line the bottom of the dish with half of them.

Using kitchen shears, cut rinsed chicken into small cubes or chunks. Place in a bowl and add the Italian dressing packet. Mix well, coating all pieces (I use my hands).

Spread chicken evenly in casserole dish and place remaining lemon slices on top.

Bake at 375°F for 30 minutes. Remove from oven and let stand for 5 minutes before serving.

Serves 3 to 4.
