SHRIMP QUICHE | |
10 slices bacon 4 eggs 2 c. half & half 1/2 tsp. salt 1/8 tsp. cayenne pepper 1 1/4 to 1 1/2 c. Swiss cheese, grated 3/4 to 1 lb. shrimp, chopped 2 c. broccoli, chopped 2 (9-inch) pie shells Fry bacon until crisp; then crumble and set aside. Combine the eggs, cream, salt and cayenne. Beat until well mixed. Bake pie shells for 5 minutes in a 425 degree oven. Sprinkle bacon evenly over both. Layer the cheese, shrimp and broccoli over the bacon. Pour the egg mixture over this. Bake at 425 degrees for 20 minutes; then lower the heat to 350 degrees and bake an additional 30 minutes or until knife inserted in center comes out clean. |
