SPINACH SALAD 
1 can beets
1 sm. jar marinated artichoke hearts
1 lb. fresh spinach
Italian dressing

Drain beets. Cover with Italian dressing and marinate for several hours. Wash spinach. Tear, removing the tough stems. Remove beets from dressing. Combine spinach, drained beets and artichoke hearts WITH their liquid. Toss and serve!

If there is not enough dressing after tossing, use a little of the Italian dressing.
