GINGER BEER (West Indies) | |
1/2 lb. ginger root, scraped 3 tbsp. sugar Juice of 1/2 lemon Peel of 1/2 lemon 1 tsp. rice 1 1/4 liters hot water 1 tsp. cream of tartar Sugar to taste Soda water Put first six ingredients in a wide mouth bottle and put in the sunshine, or near a stove for 3 days. Strain, sweeten to taste. Add 1 cup of club soda, 1 teaspoon cream of tartar. Leave for two days. You may cut scraped ginger root and flatten if you like. |
