SWISS CHEESE POTATOES 
2 tbsp. butter
2 tbsp. flour
1 tsp. salt
1/8 tsp. pepper
2 c. milk
1 (3 oz.) pkg. cream cheese, cubed
1/2 c. shredded processed swiss cheese
4 c. (16 oz.) frozen loose-pack hash brown potatoes, thawed
1/4 c. fine dry bread crumbs
1 tbsp. butter, melted

Melt 2 Tbsp. butter. Blend in flour and seasonings. Add milk. Cook and stir until bubbly. Add cheese, stirring until melted. Stir in potatoes. Turn the mixture into a 10x6x2 inch baking dish. Cover and bake for 35 minutes at 350°FF. Mix crumbs and remaining butter, and sprinkle around edges.

Bake uncovered 10-15 minutes. For a breakfast casserole or supper casserole, add smokie links, chunked smoked sausage, or diced ham before baking.
