HASH BROWN OMELET 
4 slices bacon
2 c. fried potatoes
1/2 tsp. salt
4 eggs
1/4 c. milk
1 c. shredded cheese
Pepper
1/4 c. each chopped onion & green pepper

In a 10" or 12" skillet, cook bacon until crisp. Leave some drippings, remove bacon. Brown potatoes, onion and green pepper and pat down in bottom of pan. Blend eggs, milk, salt and pepper, pour over potatoes. Top with cheese and crumbled bacon. Cover and cook over low heat until egg is set.
