EGGPLANT PARMIGIANA 
1 med. eggplant
Water
Seasoned dry bread crumbs
2 sm. cans tomato sauce
1 1/2 tsp. Italian seasoning
1/2 lb. Mozzarella cheese

Peel and slice eggplant. Dip in water an coat with bread crumbs. Bake on greased baking sheet in 400 degree oven turning once when brown.

Cover bottom of baking dish with tomato sauce mixed with Italian seasoning. Place eggplant slices in sauce top with more sauce and cheese. Bake at 350 degrees for 1/2 hour covered.
