SEAFOOD NEWBURG 
1 c. crabmeat, flaked
2 c. lobster, diced
1 can slivered pimento
3 1/2 c. milk
1 c. light cream
Salt and pepper
1 c. cooked haddock, flaked
1 c. sliced mushrooms
1 c. scallops
1 c. shrimp
1/2 c. butter
1/2 c. flour
3 egg yolks
1/4 c. sherry

Melt butter, blend in flour; gradually stir in milk and cream; cook until thickened and smooth. Season to taste. Add seafood, mushrooms and pimento. Just before serving, stir in sherry and beaten egg yolks. Heat and serve over rice or in patty shells. Serves 12.
