POTATO CAKES 
2 c. freshly mashed potatoes
2 tbsp. melted butter or bacon fat
4 tbsp. flour
Salt

Mash the potatoes well, add fat, and work in the flour. Salt to taste and turn on a floured board. Roll out to a 1/2 inch thickness and cut into rounds or triangles. Cook in a lightly greased pan for 3 minutes on each side and prick with a fork while cooking. Makes approximately 20.
