GOULASH AND GREEN PEPPERS AND
NOODLES
 
1 1/2 lbs. beef chuck
2 strips bacon
2 med. onions (chop)
3/4 c. beef broth
1 1/2 tbsp. paprika
3/4 tsp. salt
1 sm. green pepper
Sour cream
Hot buttered noodles

Cut beef into 1 1/2 inch cubes. Dice bacon, saute over high heat until fat is rendered. Add beef; brown until browned on both sides. Add the onions. Cook 2-3 minutes or until onion is softened. Add broth, paprika, salt and green pepper; blend well. Cook slowly covered, without boiling for about 2 hours. Add liquid if needed. Serve with sour cream to spoon over portions. Serve hot noodles.
