CORNMEAL MUFFINS 
1 c. cornmeal
1 c. flour
2 tbsp. sugar
4 tsp. baking powder
1 tsp. salt
2 eggs
1 c. milk
1/2 c. cooking oil

In mixing bowl, combine cornmeal, flour, sugar, baking powder, and salt. In separate bowl beat eggs slightly; add milk and oil. Make well in dry ingredients; add liquids all at once. Stir cornmeal quickly; just until dry ingredients are moistened. Fill well greased muffin cups 2/3 full. Bake in 425 degree oven for 15-20 minutes or until golden.
