SUSAN'S TOFFEE BARS 
1/2 c. butter
1/4 c. brown sugar, packed
1 tsp. vanilla
1/4 c. granulated sugar
1/4 tsp. salt
1 egg, beaten

Start heating oven to 350 degrees. Grease 11" x 7" x 1 1/2" pan. Mix butter, sugars, salt, vanilla and egg until very light and fluffy, at least 5 to 8 minutes.

Stir in: 1/2 c. sifted all-purpose flour

Blend together well and spread evenly into pan. Bake 30 minutes or until done. Let cool 10 minutes.

While cooling, melt over hot, but not boiling water, 1 cup semi-sweet chocolate bits. Stir until smooth; spread over baked layer; sprinkle with 1/2 cup chopped walnuts. Cool in pan. Cut into 24 bars.

In 1960's, my mother saw this recipe and tried it because of my name being Susan. The recipe she had included some quick oats. She put walnuts on one half and shredded coconut on the other. It became a staple dessert in our house!
