SOUR CREAM COCONUT CAKE 
3 (6 oz.) pkg. frozen coconut
2 c. sugar
2 (8 oz.) cartons sour cream
1 (9 oz.) carton Cool Whip
1 tsp. vanilla
1 yellow butter cake mix

Mix 2 packages coconut, sugar, sour cream and vanilla. Let set (in refrigerator) for several hours (or overnight). Make cake into 2 layers according to package directions. When cool, split into 4 layers. Add Cool Whip to coconut mixture. Frost cake with sour cream mixture and sprinkle with other package of coconut. Refrigerate. This is a magnificent dessert for Christmas or for a special occasion. Decorate with washed off cherries for Christmas.
