SOFT OATMEAL COOKIES | |
1 c. seedless raisins (cover with water & boil 8 minutes, drain and save liquid) 1 c. shortening 1 c. sugar 2 eggs 2 c. flour 1 tsp. baking soda 1 tsp. cinnamon 1/4 tsp. nutmeg 1/2 tsp. salt 1 c. nuts, chopped 2 c. oatmeal Cream shortening and sugar. Add eggs. Add dry ingredients, plus five tablespoons raisin liquid to creamed mixture. Stir in raisins, nuts and oatmeal. Drop from teaspoon on greased cookie sheet. I usually put the batter in refrigerator and bake the next morning. Bake at 350 degrees for 10 to 12 minutes. |
