ZUCCHINI CASSEROLE 
1/4 c. chopped onion
6 c. cubed zucchini
1 c. sour cream
1 can cream of chicken soup
1/2 c. melted butter
1 pkg. chicken Stove Top stuffing
1 c. grated cheese

Steam zucchini and onions for 5 to 7 minutes in microwave on High (drain). Mix sour cream, soup and cheese together. Add zucchini and onion. Combine stuffing and melted butter. Put 1/2 stuffing in bottom of casserole; put zucchini mixture over stuffing and spread rest of stuffing over top.

Bake at 350°F for 30 minutes or until done.

Since microwave ovens vary in power, you may need to adjust your cooking time.
