PICKLED FISH 
2 c. vinegar
1 1/2 c. water
1/2 c. sugar
Sliced onions
Pickling spices

Soak fish fillets in salt water overnight. Drain. Bring above ingredients to boil. Drop fish in boiling liquid and boil about 3 minutes. Sunfish or crappies just drop in, bring to boil and immediately take out. Put layer of fish in stainless steel bowl or ice cream pail. Put onions and spices and then another layer of fish, etc. Cool liquid slightly and pour over fish. Refrigerate.
