CRAB CAKES (MARYLAND) 
1 lb. crabmeat (backfin or select)
1/2 c. mayonnaise
3 tbsp. green pepper, chopped
2 tbsp. pimento, chopped
1 tbsp. onion
1 tsp. dry mustard
2 tsp. Worcestershire sauce
1 egg
Salt & pepper
Bread or cracker crumbs

Mix together mayonnaise, green pepper, pimento, onion (all chopped fine) and steam in small bowl placed in pan of water for 5 minutes. This removes raw taste. Stir steamed mixture into crabmeat which has been picked over and shells removed.

Add mustard, Worcestershire sauce, salt, pepper and egg. Make cakes. Dip in crumbs. Fry in butter, in skillet. Handle carefully.
