QUICHE 
2 deep-dish pie crusts
2 c. shredded Colby or Cheddar cheese
1 c. shredded Mozzarella
1/2 c. shredded Parmesan
12 eggs
salt, pepper and garlic to taste
1/4 c. cream
1 c. sliced mushrooms
1 c. diced ham, bacon or crab meat
cooked broccoli or asparagus, chopped
1 c. diced green onions or 1/2 c. diced, regular onion

Preheat oven to 350°F. Mix together the cheeses, eggs, seasonings and cream in a large bowl. Fill crusts with layer of mushrooms, meat, vegetables and onions alternately with the egg mixture. Sprinkle with a little extra cheese on top if desired.

Bake at 350°F for about 45 minutes or until quiche is solid and crust is golden brown.

Serve warm with dollop of sour cream.

Makes 2 pies.
