STUFFED WITH SPINACH 
1 box lg. pasta shells or manicotti shells
1 1/2 lb. Mozzarella cheese, grated
16 oz. low cal cottage cheese
10 oz. pkg. garden fresh spinach
1 c. chopped pimiento

Boil garden spinach until tender; drain and chop. Mix cottage cheese, Mozzarella cheese, spinach and pimiento together. Season well with salt, pepper and parsley. Stuff into cooked shells. Bake in preheated oven for 20 minutes. Serve with your favorite Italian sauce and grated Parmesan cheese.
