BANANA NUT MUFFINS 
8 tbsp. (1 stick) butter, room temperature
3/4 c. sugar
2 eggs
2 c. flour (all-purpose)
1 tsp. baking soda
1/2 tsp. salt
2-3 bananas, mashed
1 tsp. vanilla
1/2 c. pecans

Preheat oven to 350 degrees. Put in muffin pans or cupcake pan. Cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Sift all purpose flour, baking soda and salt together and add to creamed mixture, mixing well. Fold in bananas, vanilla, pecans. Cook for 20-25 minutes.
