BANANA TEA BREAD | |
1 3/4 c. sifted flour 3/4 tsp. baking soda 1 1/4 tsp. cream of tartar 1/2 tsp. salt 1/3 c. shortening 2/3 c. sugar 2 eggs, well beaten 1 c. mashed bananas Sift flour, soda, cream of tartar and salt together 3 times. Rub shortening to creamy consistency with back of spoon. Stir in sugar, a few teaspoonfuls at a time and continue beating until light and fluffy. Add eggs and beat well. Add flour mixture alternately with bananas. Pour into well greased loaf pan. Bake at 350 degrees about 1 hour. Makes loaf, 3 1/2 x 4 1/2 x 3 inches. |
