MICROWAVE PEANUT BRITTLE 
1 c. granulated sugar
1/2 c. light corn syrup
1 c. roasted salted peanuts
1 tbsp. butter
1 tsp. vanilla
1 tsp. baking soda

If raw peanuts are used, add with sugar and syrup; also add 1/8 teaspoon salt.

In a 1 1/2 quart casserole, stir together sugar and syrup (add raw peanuts here). Microwave on 100% power for 4 minutes. Stir well, (add roasted peanuts here). Microwave on full power for 3-4 minutes or until hot and bubbly. Add butter and vanilla. Stir well. Microwave on full power for 1 minute.

Peanuts will be lightly browned. Add baking soda and stir gently until light and foamy. Spread mixture on lightly greased cookie sheet. Let cool 30 minutes to 1 hour. When cool, break into small pieces and store in airtight containers. Makes about 1 pound.

Since microwave ovens vary in power, you may need to adjust your cooking time.
