STUFFED BACON ROLLS
2 c. soft bread crumbs (about 3 slices bread)
1 c. cooking apple, finely chopped
1 tbsp. onion, finely chopped
1 tbsp. snipped parsley
1/8 tsp. salt
1/8 tsp. pepper
1/4 c. milk
1 egg, beaten
10 or 11 slices bacon

In a mixing bowl, combine bread crumbs, chopped apple, chopped onion, parsley, salt, and pepper. Add milk and egg; mix well. Cut each slice of bacon in half crosswise. Shape crumb mixture into balls, using one rounded tablespoon for each. Wrap each ball in half a bacon slice; secure with a metal or wooden pick. Place bacon wraps on a wire rack set in a 15 x 10 x 1 inch baking pan. Bake in a 375 degree oven for 30 to 35 minutes or until bacon is brown. Serve immediately. Makes 20 to 22 appetizers.
