SIMPLE CLAM CHOWDER 
4 tbsp. (1/2 stick) butter
1 lg. onion, chopped
3 c. water
12 oz. loose pack frozen hash browns
1 (12 oz.) can evaporated milk
2 (6 1/2 oz.) cans minced clams including liquid
Salt and pepper to taste

Melt butter and saute onion in it. Add water and bring to a boil. Add hash browns, bring to a boil and simmer 20 minutes or until potatoes are very soft. Add evaporated milk, clams with liquid, salt and pepper. Bring to just boiling point but don't let it boil. Serves 6.
