COCONUT MACAROONS 
1 1/3 c. (3 1/2 oz.) flaked coconut
1/3 c. sugar
3 tbsp. flour
1/8 tsp. salt
2 egg whites
1/2 tsp. almond extract

Heat oven to 325 degrees. Mix coconut, sugar, flour and salt. Stir in egg whites and almond extract, mix well.

Drop from teaspoons onto lightly greased cookie sheets. Bake 20 minutes or until edges of cookies, are golden brown. Immediately remove from cookie sheets to cool on wire racks. Makes about 18. Recipe can be doubled and makes 30 cookies.
