MINESTRONE SOUP 
1/4 lb. salt pork, diced
2 onions, chopped
1 clove garlic, minced
1 c. chopped celery and celery tops
1 c. carrots, sliced
2 c. spinach
1/4 c. parsley, chopped
1 pkg. frozen mixed vegetables
1 c. chopped cabbage
1/2 lb. cooked navy beans
1/2 lb. lima beans, cooked
2 c. beef broth
1 can tomatoes
1/2 c. canned chick peas
2 tsp. salt
2 beef bouillon cubes dissolved in 1 c. boiling water
Pepper to taste
1 c. pastina, cooked

Brown salt pork and onion in a large kettle. Add garlic, celery, carrots, spinach, parsley, mixed vegetables and cabbage. Cook 20 minutes, stirring occasionally. Add cooked beans and broth, tomatoes, chick peas and 2 teaspoons salt. Add bouillon, cover and simmer 45 minutes. Add pastina and cook 10 more minutes. Serve topped with grated Parmesan cheese.
