STRAWBERRY PIE 
1 (9") baked pie shell
2 pts. fresh strawberries
1 c. sugar
2 tbsp. cornstarch
1 c. water
2 tbsp. Knox unflavored gelatin

Prepare pie shell. Stem, wash and drain the berries. Select a few of the riper berries, mash enough to make 1/3 cup; set aside.

Combine sugar, cornstarch and 1 cup of water. Cook over medium heat until thick and clear. Remove from heat and add gelatin; mix well, cool slightly then add mashed berries. Fill pie shell with whole berries. Pour mixture over them. Chill for 4 hours. Can be topped with Cool Whip, if desired.
