SAUSAGE BITES | |
2 eggs, divided 1 lb. pork sausage 1/2 c. chopped onion 1/3 c. finely chopped green pepper 1/3 c. bread crumbs 2 sheets frozen puff pastry dough 1/4 c. Dijon mustard 1 c. shredded sharp Cheddar Preheat oven to 400 degrees. In a large bowl, combine 1 egg and next 4 ingredients; stir until well blended. Shape into 8 (5 inch long) rolls. Place on a broiler pan and bake 30 to 35 minutes or until sausage is fully cooked and brown. Transfer to paper towels and cool to room temperature. While sausage is baking, thaw pastry according to package instructions. Increase oven temperature to 425 degrees. Spread mustard evenly over each sheet of pastry. Sprinkle cheese evenly over mustard. Cut each sheet of pastry in half from top to bottom and again from left to right. Place 1 sausage roll near 1 long edge of a pastry quarter. Roll up jelly roll fashion. Beat remaining egg in a small bowl. Brush edge of pastry with egg to seal. Place pastry, sealed edge down, on a greased baking sheet. Repeat for remaining sausage rolls. Bake 20 to 25 minutes or until pastry browns. Cut into 1-inch slices and serve warm. Makes 3 dozen. |
