TUNA PITA POCKETS 
1 (6 1/2 oz.) can water packed tuna
1/2 carrot, shredded
1/2 zucchini, shredded
2 sm. apples, cored, finely chopped
3 tbsp. sliced green onion
2 tbsp. light mayonnaise
1 tsp. mustard
1 tsp. poppy seeds
2 whole wheat pita breads

Combine all ingredients and toss lightly. Cut pita bread in half and open to form pocket. Fill pocket with tuna mixture. OPTIONAL GARNISH: Parsley, radish, raw vegetables, lettuce, etc. 2 servings.
