FILLET OF SOLE | |
3 tbsp. butter 1 med. onion, sliced 1/2 lb. fresh mushrooms, sliced 1 c. grated Swiss cheese 1 lb. fillets of sole 1/2 tsp. paprika Fresh parsley, for garnish Preheat oven to 400 degrees. Melt butter in a heavy skillet and lightly. Saute onion and mushrooms until soft, about 5 minutes. Butter and shallow baking dish and cover the bottom of the dish with half of the onion/mushroom mixture. Sprinkle with half of the cheese. Fold each fillet in half and arrange over the onion mixture, slightly overlapping. Top fillets with remaining onion/mushrooms and then remaining cheese. Season with salt and freshly ground pepper (to taste) and paprika. Bake for 20 minutes, then brown quickly under the broiler until the cheese bubbles. Garnish with parsley. Serves 4. |
