SWEET POTATO BALLS WITH
MARSHMALLOW
 
4-5 med. sweet potatoes, full bodied, plump
1/2 tsp. cinnamon
1/4 tsp. nutmeg
Marshmallows
Oil for deep frying
Corn flake crumbs

Boil potatoes. Peel, mash, add spices. When cool, cover marshmallows with sweet potato mixture. Roll in corn flake crumbs. Heat oil in wok or deep frying pan. Oil must be hot but not smoking. Drop balls in hot oil, a few at a time about 3 or 4 minutes. Drain on paper towels. Serve immediately or marshmallows will melt.
