ITALIAN VEGETABLE SOUP 
1 lb. sweet Italian sausage
1 med. onion, diced
16 oz. can whole tomatoes, cut up
15 oz. can chick peas, optional
10 1/2 oz. can beef broth
1 1/2 c. water
2 med. zucchini, sliced
1/2 tbsp. basil

In large pan, brown sausage. Drain fat. Add onion and saute until translucent. Add all other ingredients and bring to a boil. Reduce heat and simmer for 5 minutes. You could add 1 cup corn kernels, 1 cup peas or green beans, or 2 cups cooked cheese tortellini.
