JELLO-O MOLD 
1 pkg. lime Jell-O
1 c. crushed pineapple (sm. not drained)
1 sm. pkg. cream cheese
1 c. whipping cream (or Cool Whip)
1 tbsp. mayonnaise
2 stalks celery, diced fine
2 carrots (scraped)

Mix gelatin, cream cheese and pineapple together. Pour over all one cup boiling hot water. Let set until partially firm. Remove from refrigerator and beat with a fork until fluffy. Add cream and dressing, then celery and carrots. Pour into quart mold and chill. Garnish with crisp lettuce.
