EGGPLANT CASSEROLE 
1 med. sized eggplant, cubed and par-boiled
6-8 strips bacon, fried and crumbled
1 can stewed tomatoes, chopped in pieces
Salt
Pepper
Grated sharp Cheddar cheese

Mix eggplant, bacon, tomatoes, salt and pepper. Put into a casserole dish. Sprinkle with cheese. (Do not skimp on cheese). Bake at 350 degrees for 20-30 minutes.
