DANISH PASTRY 
4 c. flour, sifted
1 tsp. salt
1 tsp. grated lemon rind
1/4 c. sugar

1 c. shortening

1 cake yeast
1/4 c. warm water
1 c. scalded milk, cooled to lukewarm
2 eggs, beaten

Add eggs to milk and blend. Add to dry ingredients and combine lightly. Cover tightly and refrigerate overnight. Divide dough in half, roll out each piece into an 18 x 12 inch rectangle on floured board. Spread with a little butter. Mix together:

1 c. sugar
1 tbsp. cinnamon

Sprinkle 1/2 on each rectangle, roll up tightly beginning with wide end. Cut 1 inch slices, place on greased baking sheet, flatten well with palm of hand. Bake at 400 degrees for 12 minutes. Makes 36.
