POTATO PANCAKES 
2-3 baking potatoes
1 onion, grated
1 egg
1 tsp. salt
1/2 tsp. pepper
1 pinch nutmeg

Note: Do not add flour to this batter.

Peel potatoes and grate on fine grater; add to grated onion and the egg and seasoning. Mix well. Heat a tablespoonful or so of bacon fat in a large skillet. When fat is sizzling, drop batter by large spoonfuls. Brown well on both sides. (Serve at once with hot homemade applesauce or stewed apples. This makes a good main dish meal on winter days.)
