FLUFFY OMELET 
2 tbsp. Crisco
4 eggs
3 tbsp. water or milk
1/2 tsp. salt
Pepper

Separate eggs. Beat yolks with water and seasoning. Beat whites until stiff. Fold into yolk mixture. Melt Crisco in frying pan. Pour mixture into hot fat. Cook very slowly until well puffed. Finish cooking in a slow oven (275 degrees) until dry and delicately brown on top.
