CURRY CHICKEN CASSEROLE 
Cooked dark chicken meat
Cooked fresh broccoli
2 c. cream of chicken soup
1 c. mayonnaise
1/2 or 1 tsp. lemon juice
1 tsp. curry powder
Chicken broth
butter
Bread crumbs
3/4 lb. Swiss cheese, grated
1 lb. cheddar cheese, grated

Grease casserole or baking dish well. Layer chicken and add 1/8 cup chicken broth. Add broccoli. Mix soup, curry, lemon juice and pour over broccoli and chicken.

Sprinkle cheese, then bread crumbs and some melted butter on top. Bake 20-30 minutes at 350 degrees. This freezes real well uncooked. You can also cook it in the microwave. A variety of vegetables can be used. Be imaginative.

Since microwave ovens vary in power, you may need to adjust your cooking time.
