BAKED POTATO CASSEROLE 
1 pkg. bacon, cooked crisp and chopped
6 large potatoes, baked
16 oz. grated cheddar
2 bunches green onions, chopped
3 tsp. butter
salt and pepper, to taste

Scoop out insides of potatoes into a large bowl. Mix in butter and salt, pepper. Then add remaining ingredients, saving some cheese and onions to go on top.

Bake at 400°F, stirring occasionally, until bubbly. Then put cheese and onions on top, let melt and serve!
