ENGLISH MUFFIN FRENCH TOAST 
3 eggs
3/4 c. milk
1 tbsp. sugar
1/2 tsp. vanilla
6 English muffins, split
Melted butter

In small bowl, mix eggs, milk, sugar and vanilla. Place muffins on rimmed baking sheet. Slowly pour egg mixture over muffins, turning to coat both sides. Let stand 5 minutes or until liquid is absorbed. Flash freeze. Place muffins in plastic bag and keep frozen until ready to use.

To serve: Grease rimmed baking sheet. Brush each muffin with melted butter. Place on baking sheet, cut side down. Bake at 425 degrees for 10 minutes. Turn slices over. Bake 5 more minutes until golden. Serve with syrup or jam. Especially good with blueberry syrup.
