CHICKEN - MUSHROOM - BARLEY SOUP 
1 1/2 lb. chicken thighs (5) skinned
3 c. sliced mushrooms
1 c. carrots
1/2 c. chopped celery
1/2 c. uncooked barley
1 tsp. salt
Dash pepper
1/2 lb. spinach, stacked & sliced

Add 2 quarts water, boil. Simmer 1 hour. Remove chicken, cool. Cover, simmer 1/2 hour. Remove meat from bone. Add chicken and spinach last 3 minutes. 95 calories per cup.
