CHICKEN WITH VEGETABLES | |
2 chicken breasts 1 tsp. ground ginger 1 tbsp. oil 1 can evaporated milk 1 tsp. salt 1 lg. chopped onion 1 lg. slivered green pepper 1 lg. tomato, sliced 1 pkg. frozen vegetables (carrots, cauliflower, ...) Cut chicken into 1/2" x 2" slivers. Marinate overnight in ginger, oil and onion. Microwave frozen vegetables for 5 minutes and set aside. In lightly oiled skillet, saute onions, chicken and green pepper. Add 1 can milk and 1 can water. Bring to a boil and thicken with cornstarch and water. Add vegetables and cover. Simmer about 10 minutes until vegetables are cooked. Serve over cooked rice. |
