CHICKEN WITH VEGETABLES 
2 chicken breasts
1 tsp. ground ginger
1 tbsp. oil
1 can evaporated milk
1 tsp. salt
1 lg. chopped onion
1 lg. slivered green pepper
1 lg. tomato, sliced
1 pkg. frozen vegetables (carrots, cauliflower, ...)

Cut chicken into 1/2" x 2" slivers. Marinate overnight in ginger, oil and onion. Microwave frozen vegetables for 5 minutes and set aside.

In lightly oiled skillet, saute onions, chicken and green pepper. Add 1 can milk and 1 can water. Bring to a boil and thicken with cornstarch and water. Add vegetables and cover. Simmer about 10 minutes until vegetables are cooked. Serve over cooked rice.

Since microwave ovens vary in power, you may need to adjust your cooking time.
