SALMON CROQUETTES SUPREME 
1 (15 1/2 oz.) can red or pink salmon or Jack Mackerel
2 eggs, beaten
1 c. toasted bread crumbs or Ritz crackers
1/2 c. shredded cheddar cheese
Salt and pepper to taste
Onion salt to taste
All-purpose flour
Hot salad oil

Drain salmon; remove skin and bones. Flake salmon with fork. Add next 5 ingredients, blending well; shape mixture into croquettes. Coat with flour. Pan fry in hot oil until golden brown, turning only once. Yield: 6 servings.
