CREAM OF BROCCOLI SOUP I 
1 med. onion, thinly sliced
1 leek, thinly sliced (white part only)
1 med. stalk celery, thinly sliced
1 tbsp. butter
1/2 c. water
2 1/2 tsp. chicken style seasoning
2 tsp. season salt
2 tbsp. dry rice
2 1/2 c. cooked broccoli, coarsely chopped with cooking liquid
3/4 c. rich soy milk

Place onion, leek, celery, butter and 1/2 cup water in 2-quart saucepan and simmer for approximately 2 minutes over medium heat. Add season salt, rice and 1 1/2 cups water. Simmer 15 minutes. Pour onion broth mixture into blender and whiz until smooth. Return to pan. Place cooked broccoli and remaining water and cooking liquid in blender and whiz until smooth. Add broccoli to onion mixture in saucepan. Add milk, heat and serve. Yield 4-6 servings.
