SWEET & PUNGENT PORK 
1 1/2 lb. boned lean pork shoulder, cut into thin strips
1/2 tsp. salt
Dash of pepper
4 tbsp. bacon drippings
2 lg. onions, sliced
2 c. pineapple juice
1 c. water
2/3 c. vinegar
1/2 c. firmly packed brown sugar
2 tbsp. soy sauce
4 tbsp. cornstarch
2 lg. green peppers, thinly sliced

Sprinkle meat with salt and pepper. Preheat medium size electric fry pan to 360 degrees. Add fat, melt. Brown meat, stirring to brown on all sides. Remove from fry pan. Add onion, saute only slightly. Remove. Pour off excess fat.

Combine in a bowl and stir pineapple juice, water, vinegar, sugar, soy sauce and cornstarch. Pour into fry pan. Cook at 300 degrees until clear and slightly thickened. Add meat. Cover and cook on simmer 1 hour or until meat is tender. Add onions and green peppers. Cover, simmer 10 minutes. Serve over hot rice.
