ROUX 
2 c. vegetable oil
4 c. all purpose flour
1 tsp. salt
Cast iron pot or magnelite pot

Heat oil on medium heat until hot. Add flour and salt. Stir constantly for about 45 minutes or until very dark brown. You may have to reduce heat to low for awhile and then back to medium. Let cool 15 to 30 minutes then spoon into quart size jar with lid and store in refrigerator. Makes 1 quart. Great for Cajun Gumbo or Cajun stew.
