PERSIMMON COOKIES 
1 c. persimmon pulp
1 tsp. baking soda
1 c. chopped nuts
1 c. raisins
1 c. sugar
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1 egg, beaten
2 c. self-rising flour
1/2 c. cooking oil

Peel persimmons and add baking soda to the pulp. Stir in all the ingredients in the order given. Bake at 375 degrees on greased cookie sheet for 10-12 minutes. Do not over bake. These should be soft and moist.
